Are you getting ready for a 4th of July party and looking to bring a festive, kid-friendly, healthy treat? Look no further than my homemade Coconut Creamsicles!

 

When you are unsure whether the party you are going to will be serving healthy foods or not, number one tip is to ask the host if you can bring a dish for the party. These creamsicles will not only spark your taste-buds but everyone else’s as well.

 

These creamsicles have all of the goodness of coconut milk and real fruit with none of the artificial colorings, ingredients, and high-fructose corn syrup of the store-bought brands.

 

Creamy, healthy, coconut milk pairs nicely with blueberries and strawberries and is one of the most healthful and nourishing fats available. Coconut milk reduces cholesterol and is a great cure for arthritis and joint pain.

This recipe is also super simple to make!

 

Coconut Creme Popsicles

 

INGREDIENTS:
  • 1 1/2 cups organic blueberries
  • 1 1/2 cups organic strawberries
  • 1 can full fat coconut milk
  • 1/2 tablespoon vanilla extract
  • 2 tablespoons raw, local honey OR 2 drops liquid stevia

 

DIRECTIONS:

Puree both blueberries and strawberries in a blender with 1 tablespoon of raw, local honey OR 1 drop of liquid stevia. In a separate bowl whisk together the coconut milk, vanilla extract, and the other tablespoon of honey (or 1 drop liquid stevia). Pour two tablespoons of the fruit puree into each popsicle mold. Then add two tablespoons of the coconut milk mixture. Alternate until you reach the top of each mold. Place molds in freezer and let set for about 6 hours. (makes 6).
